Pitt Community College Lunch Option for Each Child Question
Scenario:
You are a childcare director who just enrolled two new families. Within the Smith family, you have one child who has a calcium and protein deficiency. This child is not allowed anything with pork or pork products, such as gelatin, due to religious beliefs. The Cannon family has two children, both of whom are lacto-ovo-vegetarians, who are all diagnosed with an iron deficiency. Their eldest child also has an allergy to citrus fruits.
Assignment:
Knowing each child’s dietary needs and restrictions, you will create a lunch option for each child (using the chart below) and then answer the corresponding questions. Keep in mind each child’s deficiency! Use chapter 14 as a resource.
**When creating the lunch option, you will need to use the CACFP Meal Pattern planning tool found on the DCDEE website (found in Moodle) in order to determine how much of each component is needed for each child depending on their ages**

How would you handle a situation when a parent who has signed the nutrition opt-out form keeps bringing in peanut butter sandwiches after you have explicitly explained on multiple days that your center is a peanut free center due to having multiple children and staff who are HIGHLY allergic to peanuts?
